If you’re like me pancakes make you happy! But sadly, I can’t eat pancakes like I used to and have had to get creative by eating a healthier alternative. In comes coconut flour pancakes!
As you can guess, my new favourite type of pancake to eat are made out of coconut flour. These pancakes are paleo friendly alternatives if you are trying to reduce the amount of white flour you consume. I love how light and tasty these pancakes are with a hint of sweetness thanks to the coconut. I also find that I enjoy the texture; it’s not your average pancake. You can definetly taste the coconut flakes as you eat it.
I originally found this recipe on Paleo Hacks blog and tweaked it a little bit to make it my own.
Coconut Flour Recipe
1/4 cup coconut flour
A hearty pink of baking soda
A hearty pinch of sea salt
1/3 cup coconut milk
2 tablespoon of melted coconut oil
3 eggs
2 table spoons of honey
1 teaspoon of vanilla extract
A dash of maple syrup
A handful of walnuts for crunch (optional)
