Vegetarian Soup

One of my favourite soups to eat during this cooler season is a vegetarian soup. It’s so easy to make and jam packed with flavour. Most of the ingredients used are easy to find at a supermarket. Please note, you do not have to purchase the same brand name ingredients that I’ve used; find something comparable or just use the recipe as inspiration for your own delicious vegetarian soup 🙂

Ingredients:
Campbell’s vegetable broth (no salt added)
Aurora vegetable bouillon mix (1 tablet)
NuPak soup mix
½ white onion
President’s Choice Diced Butternut Squash
Freshly cracked black pepper (optional)
Celery salt (optional)
Trader Joe’s 21 Seasoning Salute (optional)

Directions:
1. Bring 6 cups of water to a boil. I mixed 4 cups of vegetable broth, 2 cups of water and 1 tablet of vegetable bouillon)
2. Add 1 cup of soup mix to the boiled water. Cook for 60 minutes, or until all ingredients are cooked through
3. Chop ½ onion and add to mix
4. Add in some diced butternut squash and optional seasonings of your choice. Cook for another 10 minutes
5. Serve and enjoy!
